LAZY DAYS AND COOL WAYS



It is springtime and the living is easy! So are the receipes! Forget the store bought cakes. Try this and you will feel like you are in heaven! Quick, Easy, and Fat Free! Who says you can't have your cake and eat it, too? It is delicious! Seconds, anyone?

Fat-Free Orange Angel Cake with Toppings
Each bite is light and refreshing—just like orange cotton candy! Enjoy as is or with your choice of toppings: a rich orange-brandy sauce or a light yogurt-fruit toss.

Cake
1 box Betty Crocker® white angel food cake mix
1 1/4 cups orange juice
Apricot Brandy Sauce ( I say use GA Peaches, if you like.)
1 cup apricot preserves
2 tablespoons corn syrup
1 tablespoon lemon juice
3 tablespoons brandy or orange juice

Yogurt-Fruit Toss
2 containers (6 oz each) Yoplait® Original 99% Fat Free mandarin orange yogurt
4 cups cut-up fresh fruit

1. Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and orange juice with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
2. Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle, or rest edges on 2 to 4 cans of equal height until completely cooled, about 2 hours. Run knife around edge of cake; remove from pan.
3. In 1-quart saucepan, heat preserves, corn syrup and lemon juice over low heat, stirring constantly, until preserves are melted. Remove from heat; stir in brandy.
4. In large bowl, gently mix yogurt and fruit until coated. Serve cake with sauce or fruit mixture.

My DIL just won a $35,000 scholarship from Piedmont Hospital in Atlanta to Mercer University (GA Baptist Nursing) for her nursing degree. She also has a job waiting for her there when she graduates in 2008. She is so smart, loving, caring and is more like a daughter to me than a DIL. Where she finds the energy and time to do all she does, I do not know! I get tired just watching her. I do what I can to help with my grand girls, and she is so appreciative of every little thing you do for her. I got one smart son for marrying such a good, kind, loving woman! Of course, I can say the same about her for marrying my good, kind, loving son! He really is a good man!

I am baking this cake today for her to celebrate! She loves to bake for us and is a great cook. She has a million, maybe, cookbooks and makes sure the girls and my son get a balanced meal. She's always prompting me to exercise and eat right! Fat chance of that one! I love me some food! I do need to lose a little weight. I am always yo-yo dieting and the hubby suffers right along with me. Maybe, next year! Ok, I will start a good diet right after I eat some of this cake w/topping and fried chicken, mashed potatoes, and green beans! (hee-hee)
