I have been busy this week and not much time to write in my online journal here. We have been planting more petunias, marigolds, roses, in the front yard, and some veggies for the garden, with the help of the grand girls, son and DIL. We are enjoying the wonderful balmy breezes and nice temperatures. We had two nights of rain and the flowers are soaking it up. All of the flowers should be blooming nicely in about 6 weeks or so. It has been a great family weekend for all of us.
My hubby and I managed to unpack a few more boxes from the storage space and will clean some things for selling on ebay, or using here at home. We have so many odds and ends left, even after our huge garage sale. It is hard to downsize to a small living space from a large home. Slowly, but surely, we will make the final unpacking before 2010!
My hubby went to church without me this morning. I woke up coughing and wheezing with my asthma. I did the puff, puff puffer routine and filled my nose with that yucky Flonase. It helps but takes a while to work. I cooked a nice pot of soup for all of us to eat for dinner, and good old cornbread to go with it. It was tasty. I love my homemade soup seasoned with small beef chunks or ham. I cooked a nice quiche for breakfast. My hubby really liked it the first time I baked it. He wanted another for breakfast today. It is so easy to make. It takes about 30 minutes to cook. You can do the prep work the night before, if you have time. Here is the recipe:
QUICK QUICHE
1-9 in. unbaked pie shell (If frozen, thaw the crust about 15 minutes, or make your own pie crust)
5-6 pieces of crisp cooked bacon, crumbled or chopped (you can microwave it instead of frying.)
2 thin slices of cooked deli ham or Canadian Bacon, if desired, chopped
1/4 cup--about 4 fresh scallions, finely chopped
1 to 1 1/4 cups of grated sharp cheese or use swiss grated cheese
You can use your food chopper or food processor to prepare the above.
1 1/2 cups of half and half cream
3 large eggs
Preheat oven to 400 degrees. Cook the bacon, and crumble it.Cut up or chop the 2 slices of deli ham, clean and finely chop the scallions.Grate the cheese, you can mix the cheese with 1/2 sharp and 1/2 swiss, if desired. Place all these prepared ingredients in the bottom of the unbaked pie shell and spread evenly.
In a bowl, mix the 3 eggs and half and half with a spoon. Add a little salt and pepper. Mix until thoroughly blended. Lift and fold the mixture as you stir to incorporate some air into it. Pour this mix on top of the ingredients in the pie crust pan.
Place in the hot oven for about 30 to 40 minutes, test with knife in the center at 30 minutes, if comes out fairly clean, pie is done. If needs further cooking, check every 5 minutes. Let pie cool slightly, cut and serve warm with sliced fruit cup. if desired. This pie also makes a quick lunch or dinner with a veggie and fruit.

We will be relaxing and watching movies on Showtime tonight. I will probably sneak a piece of cake or candy before bedtime. My hubby will be eating a cup of his buttermilk and cornbread. You can't take the country out of a country boy. I do not like it. I eat other snacks, like cake and candy (ah ha).
We are feeling less stressed with all the children and grandchildren being well and able to attend school this week. Our son and DIL finished their college exams and will be out of classes for the summer. The grandchildren will be out for the summer on the 25th.
