Cake
1 box Betty Crocker® white angel food cake mix
1 1/4 cups orange juice
Apricot Brandy Sauce ( I say use GA Peaches, if you like.)
1 cup apricot preserves
2 tablespoons corn syrup
1 tablespoon lemon juice
3 tablespoons brandy or orange juice

Yogurt-Fruit Toss
2 containers (6 oz each) Yoplait® Original 99% Fat Free mandarin orange yogurt
4 cups cut-up fresh fruit

1. Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and orange juice with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
2. Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle, or rest edges on 2 to 4 cans of equal height until completely cooled, about 2 hours. Run knife around edge of cake; remove from pan.
3. In 1-quart saucepan, heat preserves, corn syrup and lemon juice over low heat, stirring constantly, until preserves are melted. Remove from heat; stir in brandy.
4. In large bowl, gently mix yogurt and fruit until coated. Serve cake with sauce or fruit mixture.

My DIL just won a $35,000 scholarship from Piedmont Hospital in Atlanta to Mercer University (GA Baptist Nursing) for her nursing degree. She also has a job waiting for her there when she graduates in 2008. She is so smart, loving, caring and is more like a daughter to me than a DIL. Where she finds the energy and time to do all she does, I do not know! I get tired just watching her. I do what I can to help with my grand girls, and she is so appreciative of every little thing you do for her. I got one smart son for marrying such a good, kind, loving woman! Of course, I can say the same about her for marrying my good, kind, loving son! He really is a good man!

I am baking this cake today for her to celebrate! She loves to bake for us and is a great cook. She has a million, maybe, cookbooks and makes sure the girls and my son get a balanced meal. She's always prompting me to exercise and eat right! Fat chance of that one! I love me some food! I do need to lose a little weight. I am always yo-yo dieting and the hubby suffers right along with me. Maybe, next year! Ok, I will start a good diet right after I eat some of this cake w/topping and fried chicken, mashed potatoes, and green beans! (hee-hee)

Share the love and kindness in your life with others like bread on the waters. Y'all have a great weekend. Don't forget Easter is early in April this year!

Hugs, GA Peach

TOO MANY SWEETS, NOT ENOUGH TIME

I have a hangover that is not from alcohol or drugs but from overeating sweets. My poor body feels sluggish and tired. I cannot believe I ate so much junk food on Valentine's Day.

First, my little 5 year old granddaughter brings me flowers, a card, and a box of chocolates. She is looking at me with those big blue eyes to see if Granny will like her gifts. Of course, we put the flowers in a vase, read the card, and open the candy. We share with each other and with Papa. She is happy and tells me I can eat "all the rest for you, Grandma." I smiled and close the box.

Second, the hubby decides to surprise me with a beautiful card and more candy since I enjoyed the other box so much. Being the chocoholic I am, I ate some from his box of chocolates. He meant well.

Third, I decided to bake my sweet hubby, and the rest of the family, a nice batch of Valentine Cake cookies. My granddaughter helped with the decorating and the pretty pink strawberry icing is all over us and the kitchen table. We did manage to get some on the cookie cakes. She then informs me that she does not like strawberry icing, and her mommy said she had eaten enough sweets today. Being the bright child she is, she declined to eat any cookies. Being the sweet tooth kid I am, I had three cookies. The hubby ate one cookie and the others are waiting for my weak moments to be consumed.

Do tell me what makes a grown woman indulge herself on sweets to the point of feeling ill? Is it a lack of will power? Getting in the spirit of Valentine's Day? Is it the old adage waste not, want not? I was brought up by parents who lived through the depression and we wasted very little food at our house. Whatever the reason, I did it. My name is Granny and I am a sweetaholic!

I hesitate to weigh myself on the bathroom scales this morning for fear I will be the 800 pounds gorilla in the room. It is too early in the day to suffer that label. I think I will have a cup of coffee and sit out on the veranda for a spell. I might read the paper and munch on a granola bar. Okay, maybe a bowl of cereal, with some strawberries, and a piece of toast. No, it is too cold on the veranda this morning. I will just sit here and think about eating something less fattening than those cookie cakes and coffee.

Alright, I am still thinking so I will close with a wish for your day to be a blessed one without too much granulated sugar in it, just the other kind!

Remember, share the love and kindness in your life as bread on the waters.
